Crispy Swiss-Style Potato Rösti
Grated potato pressed into a golden disc and pan-fried until shatteringly crisp outside and pillowy-tender within — Switzerland's greatest breakfast made with just one ingredient and a hot pan. Simple, dramatic, completely satisfying.

Ingredients
Instructions
Parboil whole unpeeled potatoes in salted water for 8–10 minutes — they should just barely start to soften but remain raw inside. Cool completely (ideally refrigerate overnight).
Peel the cooled potatoes and grate coarsely on a box grater into a bowl.
Season with salt and pepper and mix gently — do not squeeze; the natural starch is what holds it together.
Melt butter in a 22 cm non-stick skillet over medium heat.
Add the potato mixture, spreading into an even disc, and press firmly with a spatula.
Cook undisturbed for 10–11 minutes until the underside is deep, even golden brown.
Slide the rösti onto a large plate, invert the pan over it, and flip both together so the rösti returns to the pan uncooked-side down.
Cook the second side for 8–10 minutes until equally golden, then slide onto a board, cut into wedges, and serve immediately.
💡 Chef's Tip
Mix 2 tablespoons of grated Gruyère into the potato before pressing for a cheesy rösti that still celebrates the single-ingredient spirit.
