Instructions

1

Preheat your grill to high.

2

Heat the olive oil in a medium pan over medium heat. Add the finely chopped onion and crushed garlic cloves, sautéing for 8-10 minutes until softened.

3

Add the diced chorizo to the pan and cook for an additional 5 minutes, allowing it to release its flavors and slightly crisp.

4

Pour in the canned chopped tomatoes and add the caster sugar. Season with salt and pepper to taste. Bring the mixture to a gentle simmer.

5

Add the fresh gnocchi to the pan, stirring occasionally. Cook for approximately 8 minutes, or until the gnocchi float to the surface and are tender.

6

Stir in three-quarters of the mozzarella chunks and most of the torn basil leaves, reserving some for garnish.

7

Transfer the mixture to a baking dish or divide it among individual ovenproof ramekins. Top with the remaining mozzarella.

8

Place the dish under the preheated grill for 3 minutes, or until the cheese is melted and golden brown.

9

Remove from the grill, scatter the remaining basil over the top, and serve immediately with a side of green salad.

10

Enjoy your homemade Chorizo & Mozzarella Gnocchi Bake!

💡 Chef's Tip

For a spicier kick, consider using spicy chorizo or adding a pinch of red pepper flakes.
