Instructions

1

1. Cook the whole-wheat elbow pasta in a large pot of salted boiling water until al dente, following package instructions. Drain and set aside in a large mixing bowl.

2

2. In a medium mixing bowl, combine the creamy peanut butter, white miso paste, apple cider vinegar, chili garlic sauce, grated fresh ginger, minced garlic, honey, and sesame oil. Mix well until smooth.

3

3. Gradually add 1/4 cup of the reserved pasta water to the peanut-miso mixture, stirring continuously until you achieve a smooth, sauce-like consistency. Adjust the amount of pasta water as needed.

4

4. Pour half of the peanut-miso sauce over the cooked pasta and toss to coat evenly.

5

5. Add the sliced scallions, carrot sticks, broccoli florets, and chopped cilantro to the pasta. Pour the remaining peanut-miso sauce over the top and toss again to combine all ingredients thoroughly.

6

6. Taste and adjust seasoning as needed, adding more chili garlic sauce for heat or honey for sweetness.

7

7. Garnish with chopped roasted peanuts and additional cilantro before serving.

8

8. Serve at room temperature or chilled, as preferred.

💡 Chef's Tip

For a spicier kick, increase the amount of chili garlic sauce. To make this dish vegan, substitute honey with maple syrup.
